Ciabatta

Ciabatta is a traditional Italian bread. Its name means "slipper" in Italian, and it is named for its flat, slipper-like shape. The main ingredients are wheat flour, water, salt, yeast, and a small amount of olive oil. The dough has a high hydration level, typically around 80%, which means it does not require excessive kneading during preparation; instead, it is developed through folding. After baking, this high-hydration dough results in a crispy crust, large and irregular air pockets inside, and a chewy, resilient texture.

    Due to the very high hydration of Ciabatta dough, which differs from regular bread, the Ciabatta production line does not use standard bread forming machines. Instead, customized equipment is employed. During the conveying process, the dough surface is generously dusted with flour to prevent sticking. Then, it is rolled with rollers, and holes are pierced to release air. Finally, the dough is cut and shaped.
